Yes you can reschedule your visa appointment and your biometrics too. You can even change the location of your interview (within the country) if you like. I have done both of these things, change the date and location and had no issues. As an afterthought : You cannot have two set of dates for interview/biometrics.

What You Should Know Before Rescheduling Your Biometric Appointment The original biometric appointment should have been scheduled at a USCIS Application Support Center. Applicants must have a good cause for rescheduling a confirmed appointment and the USCIS officer has discretion to accept or deny the reschedule request.

You can reschedule the biometrics appointment, but it’s generally not a good idea to do so unless you absolutely have to—and rescheduling twice is certainly something to avoid. Your green card application will not be denied just because you request to reschedule your biometrics appointment, but it will be denied if you don’t get your fingerprints and photo taken in a timely manner.

I wouldn't recommend more than 1 rescheduling... if you're not careful your case could be denied because of your failure to do the biometrics... don't push your luck... 0 found this answer helpful | 1 lawyer agrees

Sometimes the background checks take a bit longer than others-this is particularly true when you have a common name. Under the law, it says that you’re supposed to get that work authorization in 90 days or under 90 days. Lately, it’s been delayed. Biometrics scanners are hardware used to capture the biometric for verification of identity. These scans match against the saved database to approve or deny access to the system. In other words, biometric security means your body becomes the “key” to unlock your access. Biometrics are largely used because of two major benefits:
The biometric fee is not considered a processing fee like any other cost recovery fee, but is rather a fee for service. The biometric fee is not refunded, if biometrics are provided and the application is then refused. As per the 1 in 10 policy, biometrics will remain valid for 10 years to be used for future temporary residence applications.
